Phase 3 Foodie Pics

On this page, you will find some pictures of meals that I've made while on Phase 3 of protocol. Transitioning to this phase was probably most difficult for me (second to loading, which is not really all that fun). I deal better with fewer choices and thinking of new and exciting things to make with my expanded list of options was just too overwhelming on most days.  To help with this, I often just stick with eating more of the Phase 2 foods. I also use the My Fitness Pal app on my phone to track my meals and protein/calories. The support group I belong to because I am an customer is also an amazing resource, and I even tried a couple of their recipes - some of which you will see below.  Scroll on down when you get a chance to check out some of my favorite meals!

This meal was my first day off drops, but still technically p2 (which is why the tilapia is breaded with wasa)...tried out my new Vegetti for the first time! That's cucumber that looks like spaghetti noodles! (and Tilapia, of course)...

So, my P3 started at 445pm at night, on a Friday, when I was meeting a friend with my kids at McDonald's to run off some energy in the play place. I ate a normal P2 dinner, and then later that evening when I was hungry again, I had my first real P3 Food - guacamole! I ate a whole avocado, smashed with a fork (a la Chevy's style), added some spices and dipped my celery "chips" right on in it - at 930pm at night! In the morning, I stayed stable at the scale with a huge sigh of relief - I was so paranoid that I would gain. But after Omni, my metabolism seems to be much more efficient...


Double the protein - shrimp and chicken! Sautéed zuchinni (thanks to my Vegettie, it was almost like eating pasta) with red onions, fresh garlic and crushed red pepper. A side salad with mustard vinaigrette and an apple. Yum!

Snack! Cucumber noodles with a hard boiled egg!
 
Sautéed zuchinni in olive oil, with one roma tomato, red onion, fresh garlic and rosemary. Topped with shrimp with crushed red pepper and freshly grated Romano cheese. I totally wanted seconds of this!
 
Quick salad at lunch time...made the dressing in less than 5 minutes. I was craving a creamy dressing but didn't have what I needed on hand. Instead, I blended about 1/4 of an avocado, 1 Tablespoon of full fat sour cream, juice of half a lime, S/P and a few drops of stevia to counter the bitterness. Then I added water to get the right consistency - the salad has tomatoes, red onion, the rest of the avocado and 2 hard boiled eggs. This was so good!!!

Epic FAIL! These were P3 Brownies, a recipe I got off of a support group that I belong to because I am a customer. They had the consistency of brownies, but I should have trusted my gut and switched out the stevia it called for with Xylitol. I've read that xylitol cooks better if you are baking with it...and if you get too much stevia, the result is bitterness. Well, bitter might have been an understatement. Oh, well, I still have 2 weeks left to try some different recipes out! I'm making berry bread tomorrow and going to try a Paleo ice cream with a machine I borrowed from a friend. Just a little practice for when I eventually reach my goal weight and transition to the "life" phase...

 
Ok, so I am officially investing in a ice cream maker for my kitchen. This is strawberry cheesecake ice cream and it was phenomenal! Cream cheese, smashed strawberries, a little Plan Greek Yogurt, Xylitol and half & half...scrumptious!

Buffalo Blue Cheese Dip - this was a fresh new twist on the P2 Buffalo Chicken I have been eating...it's buffalo chicken with a heaping spoon of Plain Greek Yogurt (or sour cream would do), and topped with Blue Cheese crumbles. I microwaved it for about a minute and stirred. Delish on celery, but I was out of it on this day so I just ate it with a spoon with a side of Colby jack cheese and apples. Very filling and so rich!
